Welcome to The Pinery Coffee Co. Home Brewing Guide

Every bean from The Pinery Coffee Company tells a unique story from around the world, and we’re excited to help you bring that story into your own cup right at home. Here’s how you can enjoy our freshly roasted beans to their fullest, whether you’re starting your morning or needing an afternoon pick-me-up.

Discover the Art of Coffee at Home

Fresh Beans: To enjoy the best cup of coffee, start with freshly roasted beans from The Pinery. Visit us at 300 North 3rd Street to see our roaster in action and pick up the freshest beans possible.

Storage: Keep your beans in a cool, dark place like a kitchen cupboard. Use an airtight container with a depressurizing valve—like the bags we provide—to protect them from air and moisture.

Grinding: The key to a perfect brew is the grind. For optimal freshness, grind your beans just before brewing. Here’s a quick guide to finding the right grind size for your method:

  • Coarse like sea salt for French Press

  • Medium like beach sand for Drip Coffee

  • Medium-fine like table salt for Pour Over

  • Fine like sugar for Espresso

  • Superfine like flour for Turkish coffee

If you need your beans ground, just swing by The Pinery, and we’ll do it for you!

Water Matters:

The water you use can significantly affect the taste of your coffee. While tap water works, filtered or bottled mineral water can enhance your brew. Heat your water to the right temperature using a gooseneck kettle for more control—ideal temperatures are between 195°F to 205°F.

Brew Ratios and Techniques:

Different coffees and brewing methods work best with specific water-to-coffee ratios, generally measured in grams. Start with these general guidelines:

  • Pour Over: Ratio of 1:16, grind medium-fine

  • Aeropress: Ratio of 1:16, grind medium-fine

  • French Press: Ratio of 1:15, grind coarse

  • Drip Coffee: Ratio of 1:17, grind medium

Pour Over

The art of the perfect pour over is precise, methodical, and surprisingly soothing. Mastering this technique can be deeply absorbing, but as you refine your skills, the complex flavors you unveil will truly astonish you. With numerous pour over devices available, each with its own specific instructions, this guide aims to provide you with the foundational best practices for crafting an exceptional pour over coffee.

Grind size: Medium-fine - like table salt

Ratio: 1:16 (this can change depending on many factors, the ratio range is 1:14-1:18)

Time: 4-6 minutes

Process:

  1. Identify your ratios and grind the coffee you’ll be using, many times folks will try experimental and light roasts with the pour over method as it can really bring out all the complexities of these roasts

  2. Bring your water up to temperature, ideally, you’ll be between 205-210 degrees fahrenheit

  3. Place your filter into the pour over and place on top of the cup you’ll be using

  4. Carefully pour some water into the pour over to wet the filter and warm the pour over and the cup that the coffee will be going into.

  5. Carefully drain the water from the cup and place it under the pour over again. Place your grinds into the filter and gently tap to level the grounds

  6. Start the bloom pour by pouring water slowing onto the grinds in a circular pattern for about 15 seconds and then wait for 30 seconds to allow for blooming to take place

  7. Pour for another 20 seconds in a circular pattern and let rest

  8. Pour again slowly for an additional 20 seconds in a circular pattern and let rest

  9. Finally make an additional and final slow pour in a circular pattern for 20 seconds

  10. Serve and enjoy

Aeropress

The Aeropress is a favorite among travelers and coffee aficionados alike, having gained immense popularity for its versatility and convenience. Ideal for campers and on-the-go coffee enthusiasts, it has even inspired a dedicated Aeropress championship, underscoring its cult status. While there are many ways to brew coffee using an Aeropress, the method we share here is our top choice. Dive in and experiment—you're sure to discover a style that captivates your taste buds.

Grind size: medium-fine - like table salt

Ratio: 1:16

Time: 2-3 minutes

Process:

  1. Identify your ratios and grind the coffee you’ll be using

  2. Bring your water up to temperature, ideally, you’ll be between 200-205 degrees fahrenheit

  3. Place the filter into the ‘cap’ of the Aeropress

  4. Carefully pour water onto the filter and let it drain out of the cap. This both seals the filter to the cap and allows the filter to be prepped

  5. Assemble the Aeropress by placing the “plunger” portion of the Aeropress on the bottom and sliding the upper open portion slightly on top of the plunger

  6. Add your grinds to the chamber

  7. Fill just over the grinds with your water to allow for a bloom and wait thirty seconds

  8. Fill the chamber with the rest of the water based on your ratio

  9. Allow everything to sit for one minute

  10. Stir the coffee and ground before applying the cap and secure by twisting on

  11. In a quick but controlled manner, “flip” the aeropress onto your cup

  12. Apply gentle downward pressure to press out the coffee from the brewer into the cup

  13. Enjoy! (and snap a photo of The Pinery beans wherever it is that you used your Aeropress!

French Press

The French Press is a timeless coffee maker known for its immersive brewing technique. This method produces a rich and bold coffee with a distinctively robust mouthfeel—thicker and more full-bodied than many other brews. Due to the relatively large metal filter, you might also notice some "fines," or small coffee particles, which contribute to its unique texture.

Grind size: Coarse - like coarse sea salt

Ratio: 1:15

Time: 4-6 minutes

Process:

  1. Identify your ratios and grind the coffee you’ll be using, often folks enjoy a darker roast, but play around with it!

  2. Bring your water up to temperature to between 200 - 205 degrees fahrenheit

  3. Pour some of the water, once warmed, into the french press to warm the chamber and then pour out

  4. Add your coffee into the chamber and fill with water with a heavy pour for about 20 seconds wetting all the grounds in a circular fashion

  5. Let sit for one minute then stir with a non-metal stirrer

  6. Use the rest of the water that you measured for your ratio (ensuring that the water does not overflow)

  7. Put on lid of the french press but do not depress

  8. Wait for about three minutes

  9. Depress the handle of the french press, serve, and enjoy!

* Note - It’s best to serve and enjoy immediately, otherwise it could lead to over extraction

Drip Coffee

Drip coffee is the quintessential "cup o' joe," perfect for sipping throughout the day, whether you're starting your morning at The Pinery or enjoying a brew at home. Each drip coffee maker varies slightly in its function, but the basic principles remain the same.

Grind size: Medium - like sand

Ratio: 1:17

Time: 5-8 minutes

Process:

  1. Grind your coffee and fill the basket in your brewer.

  2. Fill your water reservoir with the accurate ratio of water to coffee grounds that you set out to make.

  3. Press on the brew button and the water will flow through the grounds and extract the coffee in the pot below.

  4. That's it! Many times, these brewers have a heating element below them to keep the coffee hotter longer, however, it’s not ideal for the coffee to sit on the warmer as it can change the taste of the coffee, best when fresh!
