Welcome to The Drip, your inside look at everything brewing at The Pinery Coffee Co.! Here’s what’s happening this week:


Coffee Highlights: A Lesson in Seasonality and Roasting

When we first opened, our East Java Medium Dark quickly became a customer favorite. It was smooth, balanced, and packed with rich chocolatey depth, accented by subtle cherry notes—a go-to for those who loved a full-bodied yet nuanced cup. But beyond being a hit in the shop, this coffee taught us invaluable lessons about seasonality and what it means to roast coffee that’s constantly shaped by nature.


East Java has been a key player in the global coffee trade for centuries. Dating back to the 1600s, when the Dutch first introduced Arabica plants to Indonesia, the region became one of the world’s first large-scale coffee-producing areas. Today, the island’s high-altitude farms, volcanic soil, and humid climate make for exceptional coffee, often characterized by earthy, herbal notes with hints of dark chocolate, spice, and, in some lots, a bright cherry-like sweetness.


One of the biggest lessons we learned from roasting East Java coffee was how dynamic coffee is as an agricultural product. The same origin, even the same farm, can produce beans with subtle differences from one harvest to the next. Weather patterns, processing methods, and even slight variations in elevation all influence flavor, challenging roasters to continuously refine their approach.


We learned this lesson firsthand when we went to reorder our East Java lot, only to find out it had been completely sold out. We were stunned—we had assumed we could keep it in rotation indefinitely. But coffee, like any crop, is finite. Once a harvest is gone, it’s gone. We had to wait for the next season’s yield to enjoy that incredible cup again, and even then, we knew it wouldn’t be exactly the same. It was a humbling moment that reshaped how we thought about sourcing, deepening our appreciation for the farmers, importers, and unpredictable nature of coffee itself.


Looking back, our East Java Medium Dark wasn’t just a coffee—it was a milestone in our understanding of coffee’s natural evolution, from farm to roast to cup. And while we’ve since explored many origins, East Java remains a reminder that coffee is never static—it’s always changing, just like the hands that grow, harvest, and roast it.
